De Molen beers are not all about heavy flavours and body. Now and then it’s time for something different and refreshing. This light amber coloured Bitter with an American touch is a great example. With 15% ABV is was more than obvious that we had to name this dessert beer Bombs and Grenades. The use of champagne yeast has had it’s effect on both flavour and body. There’s plenty of fruit like orange, tangerine and sweet apples. It’s powerful and full bodied but still easy going. Although the name would suggest otherwise it’s our favourite amongst the female clientele yet also highly appreciated by the other sex.

Full of leather, vanilla, amazing wooden notes, beautifully floral character from the hops, thick Belgian chocolate, Much character. The flavour of crazy wooden tartness. In the old west it was custom to treat crooks, quacks and charlatans with tar and feathers. Then they were driven out of town backwards on their horse or donkey. And now he is regarded as one of the main founders of microbiology. Brewers to this day still much profit from his findings. De Molen Rijn & Veen
 |
Translation: Rhine & Moors
Recently, our brewer was approached by De La Region of the Leidsch Dagblad. A section that deals with local products around Leiden. They had the question whether locally grown wheat beer could be used for brewing. The wheat comes from Hazerswoude and is a byproduct of the potato. To avoid the soil to become poor the potato farmer grows wheat at regular intervals. This wheat is normally used as cattle feed. It was a challenge to find the right recipe for a beer by experimenting with the wheat. That was found by our brewer by mixing the wheat with an equal quantity of barley malt. In addition we used specially developed yeast called Weihenstephaner Weizen. This created a nice German-style white beer. Weizen means, just like the old Dutch word "wit" just wheat. So witbier is a wheat beer! The yeast used is also a fast-acting yeast which made the lagering process a lot shorter than usual. However it took twice as long as normal to brew the beer. This is because we did not malt the wheat.

Kopi Luwak or Civet coffee is the most expensive coffee in the world. The high price is not because of the rareness of the coffee berries themselves but because of the special production process. The coffee berries are eaten by the Luwak - a civet cat. The beans however can not be digested by the Luwak and therefor can be found in their pooh. The beans are washed and slightly roasted. This whole process of eating, pooh, find the pooh and treat the berries is very time consuming. This is of course reflected in the price of the coffee. Real coffee connaisseurs highly appreciate this coffee. And what does Brouwerij de Molen do with it? We use it in our own production process of brewing beer.
